These holiday cookies are made with the freshest ingredients and are as simple as making traditional chocolate chip cookies. But we use white chocolate chips and cranberries instead of dark chocolate and nuts.

If gluten free living is your thang, you don’t have to sacrifice taste or texture. I use Gluten Free Jovial Pastry Flour, because it’s the best for baking and works perfectly in this decadent pumpkin bread. It’s also soaked for easy digestion!

The Recipe: White Chocolate Cranberry Bliss Cookies

You will need: A mixer, a cookie sheet, unbleached parchment paper and holiday string if tying with a bow. If you want to make these cookies gluten free I recommend  Gluten Free Jovial Pastry Flour.

Ingredients
  • 2 ¼ cups all purpose flour (for gluten free see links above)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • 1 cup butter
  • ¾ cup brown sugar
  • ¾ cups granulated sugar
  • 1 teaspoon vanilla paste or extract
  • 2 large eggs
  • cups rolled oats
  • cups dried cranberries
  • 10 oz good quality white chocolate chips
Instructions
  1. Preheat oven to 375 and place rack in center of oven.
  2. Place flour, salt, cinnamon and baking soda in a large bowl and set aside.
  3. Cream butter and sugars in mixer.
  4. Add eggs and vanilla paste, mix till combined.
  5. Slowly add flour mixture, then whole oats, mix well.
  6. Add chocolate chips and dried cranberries, fold in by hand.
  7. Place by large spoonfuls onto parchment covered cookie sheet and bake for 10 minutes.
