How To Make Air Fryer Parmesan Chicken Tenders:

This recipe is so darn easy to make: simply dip tenders in whisked eggs, dredge in Italian bread crumbs tossed with freshly grated Parmesan, spray with olive oil, pop in the air fryer, and ten minutes later you have perfectly golden, crispy chicken tenders. Serve them alone or with ranch dressing. 

Can’t Find Tenders? Yeah, Me Too

Chicken tenders are the little strips of meat that are attached to the underside of each chicken breast. They are usually available at the grocery store, but Covid seems to have messed that up, at least that’s what my butcher tells me. He says all tenders are being sold to restaurants because of higher than usual demand, so grocery stores are out of luck. So, if you can’t find them, no worries, just slice a 1 pound boneless, skinless chicken breast into 3/4″ thick strips. That’s actually what I did for these photos.

WHY USE AN AIR FRYER?

So one of the reasons I am late to the air fryer game is that I am a pretty traditional girl when it comes to cooking methods. THAT SAID, now that I have an air fryer I see the appeal.! It’s very fast, everything turns out crispy, and you can get that crispiness without deep frying. Of course, I still want you to use healthy fats in your cooking, because I am all about those healthy fats! So I encourage you to stick to extra virgin olive oil, butter/ghee, avocado or coconut oil when using your air fryer. Cool quality organic cooking sprays are fine too.

The Recipe: Air Fryer Parmesan Chicken Tenders

What you need: an air fryer and an organic olive oil cooking spray

Quick and easy Air Fryer Parmesan Chicken Tenders made in less than 15 minutes!

Ingredients
  • 1 pound chicken tenders (or chicken breast sliced into strips 3/4" thick)
  • Sea salt and pepper to taste
  • 2 eggs plus one tablespoon water, whisked well
  • 1 cup your favorite Italian bread crumbs (not panko) I use Progresso Italian Bread Crumbs
  • 1/2 cup freshly grated parmesan cheese
  • olive oil cooking spray
Instructions
  1. NOTE: different brands of air fryers cook differently. Cooking time may need to be adjust 1-2 minutes either way.

  2. Sprinkle chicken tenders with sea salt and pepper to taste, set aside.

  3. Whisk eggs and water in a shallow bowl. Place bread crumbs in another shallow bowl. Grate parmesan and toss with bread crumbs.

  4. Dip tenders into eggs and then dredge in bread crumb mixture.

  5. Spray one side breaded chicken generously with olive oil cooking, place chicken into the air fryer basket sprayed side down. Spray other side.

  6. Cook at 400 degrees for ten minutes, turning halfway through cooking time. Serve.
