Five Minutes is All It Takes!

To make this meal in the most time efficient way, I heat tortillas directly on the burner while the eggs fry in the pan. When both are finished I garnish with avocado, queso fresco and drizzle with salsa verde! That is it. Breakfast, lunch or dinner in five minutes flat!

The Recipe: Fried Eggs and Tortillas with Salsa Verde and Queso Fresco

Tips and what you will need: You will need a good brand of salsa verde, Queso Fresco  (a Mexican cheese that can usually be found in the deli section of super markets) and a good quality pan.

Ingredients
  • butter ghee or olive oil
  • 2 eggs fried sunny side up
  • 2 100% corn tortillas
  • salsa verde or tomatillo salsa
  • 3 avocado slices
  • queso fresco
  • sea salt freshly ground pepper
Instructions
  1. Heat frying pan on high heat
  2. When hot, add butter, ghee or olive oil
  3. Turn heat to medium, add eggs to pan and allow to cook until whites are set and yolks are runny. Putting a lid over egg the last minute or so can help.
  4. While eggs cook, heat tortillas directly over flame on another burner
  5. Top tortillas with eggs, season with salt and pepper
  6. Add avocado slices
  7. Drizzle with salsa verde and sprinkle with queso fresco. Serve!
