French Toast with Berries and Cottage Cheese:

When it comes to french toast, it’s all about the bread. For my family I use a thick and hearty flaxseed Ciabatta or a nice artisan bread for this recipe. For my self I use a Gluten Free Sourdough from New Grains GF Bakery. They offer free shipping on orders over $48. I buy a bunch and freeze it, using it as I beed it.

The Toppings:

I top this simple French toast with creamy cottage cheese fresh berries, but mascarpone, cream cheese, or ricotta work great too! You can use any berry you wish or use assorted berries, then drizzle with real maple syrup!
