After a Hard Day of Play…

…we came back to our Air BNB hungry and ready to eat but didn’t want to make anything time consuming or extravagant, so several nights we opted for a version of a salad like this: greens, creamy burrata, seasonal fruits, nuts and salty prosciutto tossed in lemon vinaigrette and drizzled with a quality balsamic glaze..

An ‘Assembly Only’ Complete Meal Salad in Minutes!

This salad comes together super quick, making it a summer go to. It also tastes great with rotisserie chicken tossed in addition to or instead of prosciutto.

The Recipe: Peach, Berry, Burrata and Prosciutto Salad!

Tips and what you need: a good knife, a hand held juicer and a quality balsamic glaze.

Assembly only, no cooking required. And made in minutes! If desired add rotisserie chicken instead or in addition to the prosciutto.

Ingredients
  • 2 Tablespoons extra virgin olive oil
  • 1 Tablespoon fresh squeezed lemon juice
  • Sea salt and freshly ground black pepper
  • 5 ounces baby spring mix
  • 1-2 ripe peaches sliced
  • 1/2 cup sliced strawberries
  • 1/2 cup blueberries
  • 6 oz burrata cheese separated into 1-2 tablespoon chunks
  • Salted or caramelized nuts of any kind to taste
  • 10 slices prosciutto and or rotisserie chicken
  • Balsamic glaze
Instructions
  1. Whisk olive oil and lemon juice with a pinch of sea salt and black pepper, set aside
  2. Place greens on a platter and toss with lemon and oil, add peaches, berries, burrata, prosciutto and nuts, drizzle with desired amount of balsamic glaze leaving it on the table for people to add as they wish. Enjoy!
