Waffles: Traditional, Gluten Free and Grain Free Options!

Waffles are such a wonderful and be beautiful choice for breakfast, so I love to offer you options. You can make these waffles using your favorite traditional all purpose flour, but I also have a wonderful suggestion to make this cake gluten free but just as good: Jovial Gluten Free Pastry Flour. It’s not only a fabulous GF flour but is soaked for easy digestion. If you prefer to go completely grain free skip the waffle recipe and use Birch Benders Paleo Waffle Mix, then top as directed in recipe.

You may have noticed last week I posted oven fried chicken, this week waffles, next week? Chicken and Waffles…oh no I didn’t. Oh yes I did. But before we go there, let’s go here…

Whipped Cream: It’s not all created equal

There is nothing quite like a homemade whipped cream. So light, so fluffy and so beautiful. In this recipe we are sweetening the cream with real maple syrup instead of sugar, which of course lends itself well to waffles! Just make sure you are using real maple syrup tapped directly from a maple tree. (No artificially flavored corn syrup is what I am getting at). As always I use vanilla paste (affiliate link) instead of extract, but extract works too. Paste doesn’t have that alcohol aftertaste and allows beautiful tiny flecks of vanilla bean to be seen in every scrumptious bite!

Buttermilk Waffles with Berries, Bananas and Maple Whipped Cream

I prefer whipping cream by hand,  BUT when making a maple whipped cream you really need to use an electric mixer (affiliate link). The added liquid of the real maple syrup makes the whipping process take a several minutes longer and a mixer is required unless you have an arm with a lot of endurance!

Let’s Talk Waffle Irons:

There are many to choose from, some are even fun and surprising! I have a Belgian Waffle Maker. The batter is actually the same whether you make traditional waffles or Belgian, the only difference is the waffle maker itself. Belgian waffles are extra thick (1 1/4″). My waffle maker is at least a century old so when it finally kicks the bucket I have a gem picked out to replace it. My dream waffle maker is this Kitchen Aid Belgian Waffle Maker (affiliate link) that flips so you can make two waffles at once! Fantastic, but that convenience is a little pricy so here are a few more choices, some I never even knew existed!

Whatever waffle maker you use, this recipe is a solid hit. Buttermilk waffles cooked to crispy perfection, topped with ripe bananas and sweet berries and finished with a maple whipped cream! Exquisite.

 The Recipe: Blackberry Banana Buttermilk Waffles with Maple Whipped Cream

You will need:  vanilla extract or vanilla paste, real maple syrup, and if you want to make gluten free waffles I recommend Jovial Gluten Free Pastry Flour.. If you want to make these waffle grain free, skip the waffle recipe and use Birch Benders Paleo Waffle Mix, then top as directed in recipe.

Ingredients
Waffle ingredients
  • 2 cups all purpose flour (gluten free and grain free options linked above)
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 2 cups buttermilk (dairy free use almond milk)
  • 1 cup melted butter, plus additional for topping waffles
  • 2 eggs
  • 1 tablespoon sugar or honey
  • 1 tsp vanilla paste
  • 2 bananas sliced
  • 2 cup blackberries
Maple whipped cream ingredients
  • 1 cup heavy whipping cream
  • 1/4 cup real maple syrup, more if desired for pouring over waffles
  • 2 tsp vanilla paste
Instructions
Maple whipped cream prep:
  1. Place all ingredients in bowl a beat with hand mixer on high speed until peaks form.

Waffle prep:
  1. Heat waffle maker. Whisk flour, baking soda and salt. Whisk in eggs, buttermilk, vanilla paste and melted butter till well combined. (add sugar or honey if desired, whisk)
  2. Cook waffles according to waffle maker instructions.
  3. Drizzle waffles with syrup and melted butter if desired (I always desire melted butter) and then top with berries, banana slices, and whipped cream! Enjoy.
