Breakfast, it can be a challenge. There are usually time constraints involved and sometimes rushing around can lead us to grab a less than healthy choice for the first meal of the day. But it doesn’t have to be that way. In fact this breakfast of Steel-Cut Oats with Seasonal Fruit can simmer away while you get ready for the day!

Steel-Cut Oats with Seasonal Fruit:

Steel-cut oats, also known as Irish or Scottish oats, are made when the whole groat is cut into several pieces, rather than rolled. Steel-cut oats look almost like barley and this cut gives the oats a bit more texture, what I call a hearty ‘bite’. Steel cut oats are super creamy and delicious, especially when topped with seasonal fruit.

Make Ahead to Save Time!

If you have ever tried to reheat old fashioned rolled oats, you probably know it’s not that great of an idea. Steel cut oats on the other hand reheat beautifully! So feel free to make a large batch and reheat as desired. I love time savers.

Toppings For Steel Cut Oats:

After warming oats you simply top with your favorite seasonal fruit and nuts. Because it’s fall I chose fresh figs, pomegranate seeds, pepitas, chopped dates, red pears and blueberries. A beautiful, healthy bowl of goodness in minutes! (To see how to easily seed a pomegranate click!) BUT I have other suggestions too: nut butters and on steel cut oats, as are dried fruits like apricots, blueberries, cranberries, cherries, shredded coconut, and cherries. You can add flavor and sweetness with applesauce, yogurt, maple syrup, honey or jams as well as vanilla paste and cinnamon!

Try Overnight Oats!

If you, like most people, are rushed in the morning, overnight oats are a fabulous option for a quick healthy breakfast. Instead of cooking you simply soak the oats overnight and they are ready to eat the next morning. Just grab and go!
