Something amazing happened at my house this morning…I was hungry…really hungry.

I had to have blood drawn and had to be fasting to do it. I thought I would outsmart everybody and show up at the lab right when the doors opened. Well, I guess everybody had the same idea. Let’s just say while I waited ‘a while’, and while I waited I got really hungry. I daydreamed about what I would eat for breakfast when I got home, and this came into my mind…Easy Huevos Rancheros!

Easy Huevos Rancheros!

That’s right… a crispy corn tortilla topped with pulled pork, black beans, eggs sunny side up, avocado slices and ranchero sauce or fresh salsa!

Options, Options, Options

I call these “Easy” because traditional Huevos Rancheros are served with a smoky adobo sauce and rice and beans, I simplified mine using a ready made Ranchero Sauce. You can make this recipe as simple or ‘not simple’ as you like. You can use a ranchero sauce, or make my fresh salsa or use freshly made store bought , or use your favorite salsa that comes in a jar. You can buy carnitas already prepared (Whole Foods Market makes fabulous carnitas) skip the pork altogether and go vegetarian, or you can make carnitas yourself using my crock pot pulled pork recipe. Whatever way you choose to go, these Easy Huevos Rancheros will be delicious!

Tips and what you will need: Use already prepared pulled pork or make my recipe in advance. Use prepared salsa or make mine. If you prefer to use a traditional ranchero sauce I highly recommend it! (affiliate links)

Ingredients
  • 2 corn tortillas
  • 1/2 a pound prepared pulled pork (my recipe link in post above)
  • 1/2 cup black beans
  • 2 large eggs
  • Half an avocado, peeled and sliced
  • ranchero sauce, Pico de gallo or salsa
  • Sea salt and freshly pepper
  • Cilantro, leaves removed from stems and chopped
Instructions
  1. Heat pulled pork and beans in same pan and set aside.
  2. Cook good quality corn tortillas in a pan with butter, or ghee on med/high heat till nice and crispy, set aside. Then crack two eggs into the same pan, turn heat to low, cover with lid and cook till whites are done and yolks are runny...sunny side up!
  3. Place pork and beans on top of tortillas, top with eggs.
  4. Add avocado slices, a little ranchero sauce, salsa or pico de gallo
  5. Season with sea salt and pepper
  6. Garnish with cilantro
  7. serve
