Ingredients
butterghee or olive oil
2eggsfried sunny side up
2100% corn tortillas
salsa verde or tomatillo salsa
3avocado slices
queso fresco
sea saltfreshly ground pepper
Instructions
Heat frying pan on high heat
When hot, add butter, ghee or olive oil
Turn heat to medium, add eggs to pan and allow to cook until whites are set and yolks are runny. Putting a lid over egg the last minute or so can help.
While eggs cook, heat tortillas directly over flame on another burner
Top tortillas with eggs, season with salt and pepper
Add avocado slices
Drizzle with salsa verde and sprinkle with queso fresco. Serve!
