Baked Sweet Potatoes with Spicy Maple Creme Fraiche

Ingredients

Potatoes:

  • 4 small-med sweet potatoes
  • Butter ( or olive oil or ghee to rub on skin)
  • Sea salt
  • Pepper

Spicy Creme Fraiche:

  • 1/2 cup creme fraiche, or sour cream or plain greek yogurt
  • 1 teaspoon freshly squeezed lime juice
  • 1 Tablespoon maple syrup 
  • 1 teaspoon serrano chili minced finely 
  • 1/2-1 teaspoon tabasco sauce
  • Small pinch sea salt
  • 1/4 tsp freshly ground pepper

Instructions

For Potatoes:

  1. Preheat oven to 450, place rack in center position and place a piece of foil in the bottom of the oven to catch drips
  2. Rub potatoes lightly (or your oven will smoke) with butter, olive oil or ghee and sprinkle  generously with sea salt and pepper. Place directly onto oven rack and bake for 40-45 minutes (or until a fork goes in easily).
  3. Remove when ready, slice open and top with sauce and serve.

Creme Fraiche:

  1. Stir all ingredients until well mixed. (see link above to learn to chop a Serrano chili)
