Ingredients
2Tablespoonsextra virgin olive oil
1Tablespoonfresh squeezed lemon juice
Sea salt and freshly ground black pepper
5ouncesbaby spring mix
1-2ripe peachessliced
1/2cupsliced strawberries
1/2cupblueberries
6ozburrata cheeseseparated into 1-2 tablespoon chunks
Salted or caramelized nuts of any kindto taste
10slicesprosciuttoand or rotisserie chicken
Balsamic glaze
Instructions
Whisk olive oil and lemon juice with a pinch of sea salt and black pepper, set aside
Place greens on a platter and toss with lemon and oil, add peaches, berries, burrata, prosciutto and nuts, drizzle with desired amount of balsamic glaze leaving it on the table for people to add as they wish. Enjoy!
