An easy, healthy summer dessert!

Cut the bananas in half and insert a Popsicle stick into each half. Place them on the baking sheet and freeze for 15 minutes to an hour.
When you are ready to dip, melt the chocolate in a double boiler or microwave (see how to make your own double boiler in post above. If using microwave, use instructions on chocolate package for melting) Add 1 tablespoon coconut oil and whisk until well blended. If you desire a thinner coat of chocolate add second tablespoon of oil.
Pour melted chocolate in shallow bowl and roll each banana half in the chocolate, then quickly sprinkle with your topping (if using).
Freeze until the chocolate sets, 30 minutes. Serve or freeze in an airtight container for up to a week.
