A delicious salad that's great served alone or alongside any protein.
Cook farro to package instructions. When done, pour into a colander and allow to cool.
While farro cools, chop romaine, slice tomatoes, cucumbers and onions, chop mint. Place in a bowl and set aside.
Whisk together olive oil, lemon juice, honey, sea salt and pepper.
Add cooled farro to bowl with salad, drizzle with desired amount of salad dressing and toss. Add feta and toss again. Season with sea salt and pepper if needed. Enjoy!
