Tomato and Avocado Salad (Whole30)

An easy salad to toss together. Great with Mexican food or a side dish to any protein.

Ingredients

Salad:

  • 1 pound grape or cherry tomatoes, halved
  • 2 ripe but firm avocados, peeled and diced
  • 1/3 cup roasted pine nuts
  • sea salt and pepper to taste

Lime Vinaigrette:

  • 1/8 cup good quality extra virgin olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1-2 tablespoons cilantro, chopped (depending on how much you want, or if you want to use more for garnish)
  • sea salt and pepper to taste

Instructions

Salad:

  1. Prep tomatoes and avocado and place in bowl or platter. Add pine nuts (toast if in a small pan medium heat if they aren't already toasted) Sprinkle salad with sea salt and pepper, set aside.

Dressing:

  1. Whisk together olive oil, lime juice, cilantro, sea salt and pepper. Dress salad, toss gently, serve!
