Mediterranean Chicken Salad with Parmesan Flatbread and Hummus

A delicious, healthy, complete meal salad.

The Dressing:

  • 1/3 Cup Extra Virgin Olive Oil
  • 3 Tablespoons freshly squeezed lemon juice
  • 1 small clove garlic minced or grated on microplane
  • sea salt and pepper to taste

For Salad:

  • 5 oz bag organic baby greens
  • 2 cups diced rotisserie chicken or leftover roasted chicken
  • 1 Persian cucumber diced (or 1/2 a regular cucumber, peeled and diced)
  • 1 cup cherry tomatoes cut in half
  • 1 medium sized carrot grated
  • 1/2 cup feta cheese

Dressing Prep:

  1. place all ingredients in a bowl and whisk until emulsified

Salad Prep:

  1. Place greens on a platter, top with chicken, nuts, vegetables and feta
  2. Dress and toss

To plate:

  1. Place salad on four plates, add hummus and flatbread to each plate. serve!
