Veggie Wrap~ Five Minute Lunch

If you are a busy health conscious person ‘wraps’ just may be the perfect lunch for you. This colorful wrap is loaded with antioxidant rich vegetables and healthy fats and is a cinch to make!

Ingredients

  • 1 tortilla
  • 1/2 a small tomato, diced
  • handful baby spinach
  • 1 diced Persian cucumber, these are small and the skin and be left on
  • 1/2 a ripe avocado, sliced
  • a small bunch of sprouts
  • desired amount of ranch dressing

Instructions

  1. Dice tomato and set on a paper towel to soak up extra juice.
  2. Place spinach on a tortilla.
  3. Top with cucumbers, avocado, sprouts and tomatoes.
  4. Drizzle with ranch dressing.
  5. For dressing: Place all ingredients in a small bowl and whisk till smooth.
