Avocado and Goat Cheese Toastettes!
An easy and delicious way to get your healthy fats!

artisan sourdough baguette

ripe avocados, mashed with fork

oz
soft goat cheese

tsp
olive oil

sea salt
I use Maldon Flaked Chef's Salt

freshly ground black pepper

Preheat oven to 425 and place rack in upper third of oven. Cover a cookie sheet with unbleached parchment paper.

Slice baguette into 1/2" slices. Place slices on cookie sheet and place in oven till golden brown, usually 3-4 minutes.

While bread is in oven, mash avocados with a fork.

Remove bread from oven, spoon mashed avocado on each slice of bread and then sprinkle with with soft goat cheese.

Place back in oven for 2-3 minutes (until goat cheese is just melted).

Remove, sprinkle liberally with sea salt, pepper and chives.

Then sprinkle lightly with red pepper flakes. Serve!
