Ingredients
Potatoes:
4small-med sweet potatoes
Butter ( or olive oil or ghee to rub on skin)
Sea salt
Pepper
Spicy Creme Fraiche:
1/2cupcreme fraiche, or sour cream or plain greek yogurt
1teaspoonfreshly squeezed lime juice
1Tablespoonmaple syrup
1teaspoonserrano chili minced finely
1/2-1teaspoontabasco sauce
Small pinch sea salt
1/4tspfreshly ground pepper
Instructions
For Potatoes:
Preheat oven to 450, place rack in center position and place a piece of foil in the bottom of the oven to catch drips
Rub potatoes lightly (or your oven will smoke) with butter, olive oil or ghee and sprinkle generously with sea salt and pepper. Place directly onto oven rack and bake for 40-45 minutes (or until a fork goes in easily).
Remove when ready, slice open and top with sauce and serve.
Creme Fraiche:
Stir all ingredients until well mixed. (see link above to learn to chop a Serrano chili)
