Chocolate Covered Nut Butter Banana Bites

When I was a little girl we went to Newport Beach on vacation and I loved to walk to the frozen banana stand for my favorite summer treat! Well these little bites are reminiscent of those summer treats but with far better ingredients and without the stick.

  • 2 small bananas
  • 4 oz dark chocolate I use 60% cacao 1 tsp coconut oil
  • Almond or peanut butter or plain, or honey
  • Toppings: anything you want or leave them plain! Besides the toppings I show here you could use granola raisins, dried cranberries, or sprinkle with cocoa powder.


  1. Slice bananas, place on wax paper. Put a dab of maple almond butter on half the banana slices then top with remaining slices.
  2. Freeze for one hour.
  3. Melt chocolate and coconut oil in double boiler. If you don't have one you can make your own by placing a bowl over a pot with one inch of water in it.
  4. Pour melted chocolate into small measuring cup so the chocolate is deep enough to cover frozen banana bites when dipped.
  5. Pick up frozen banana bites and place in melted chocolate.
  6. Use two forks to gently place bite back on wax paper.
  7. Immediately top with your choice of topping before chocolate hardens.
  8. Repeat till all bites are done.
  9. If you need to remelt chocolate half way through dipping, just place in microwave for a few seconds. Place chocolate covered bites back in freezer for at least another hour.
  10. Then place in an airtight container or baggie and place back in freezer.
  11. Take out of freezer ten minutes before serving.
