Berries in Compote with Vanilla 'Sour' Whipped Cream

If you would like to skip the sugar use Stevia drops to taste instead of sugar in both the compote and whipped cream.

Ingredients

Berries: 

  • 6 cups fresh berries a mixture of any variety of berries you wish
  • 1/3 C sugar I like super fine sugar like Caster sugar or bakers sugar
  • 1/3 C freshly squeezed orange juice

'Sour' Whipped Cream

  • 1 cup heavy whipping cream
  • 1/3 cup Crème Fraiche
  • 1/3 cup powdered sugar
  • ½ T vanilla paste

Instructions

For the Berries:

  1. Combine all fruit in a large bowl. Gently stir. Separate 1 cup fruit and place in another bowl. Add orange juice and sugar to the separated fruit and mash with a fork or potato masher. Once mashed, pour over the fruit in large bowl and leave at room temp for 1 ½ -2 hours.

For the Whipped Cream:

  1. Add all ingredients to a bowl and use a mixer to whip till desired consistency. Top berries with cream.
