Preheat oven to 375 degrees and move oven rack to lower third of oven. Wipe side of cake pan with butter or spray with organic cooking spray. Cut parchment paper into a circle and place it in the bottom of the pan, sprinkle with generously with organic granulated sugar (or lankanto monk fruit sweetener if making the low carb version). Set aside.
