Parmesan Chive Jalapeño Waffles with Maple Cinnamon Butter (Paleo Option)

A savory, sweet and spicy waffle that will blow your mind. Can be made the traditional way or gluten free/Paleo!

Ingredients

Maple Cinnamon Butter:

  • 3 Tablespoons pure maple syrup and more for pouring over waffles if desired
  • 1 stick softened butter 1/2 cup
  • 1 1/2 teaspoons cinnamon

Waffles:

  • 4 slices bacon cooked and chopped
  • 2 tablespoons chopped Jalapeño pepper or less, or more, it depends on how spicy you like it!
  • 1/4 cup chives chopped
  • 1 cup finely grated parmesan cheese
  • 2 cups prepared waffle mix made to package instructions I used a Paleo mix linked above

Instructions

Maple Cinnamon Butter:

  1. Use a fork to mix soft butter, maple and cinnamon, set aside

Waffle prep:

  1. Cook bacon and prep Jalapeño, chives, and cheese (see link above if you need a tutorial on handling a chili pepper)
  2. Preheat waffle iron and brush with butter or spray with organic cooking spray
  3. Prepare 2 cups waffle mix according to package instructions then add the peppers, bacon (reserving 2 Tablespoons for garnish), cheese, and chives, mixing well.
  4. Pour 1/2 cup waffle mix onto iron and cook until crispy
  5. Top with maple cinnamon butter, sprinkle with reserved bacon, and drizzle with maple syrup!
