Shaved Brussels Sprouts and Date Salad

A simple salad that tastes great with almost any protein

Ingredients

  • 1 pound fresh Brussels Sprouts
  • 6-8 fresh pitted dates, chopped (I use medjool)
  • 2 oz shaved Parmesan Cheese
  • 1/4 cup good quality extra virgin olive oil
  • 2 tablespoons good quality white balsamic vinegar
  • sea salt and pepper to taste

Instructions

  1. Cut off the ends of Brussels sprouts and run through processor using the slicing blade. If using a knife, cut off ends, then cut in half and thinly slice. Place in a large bowl

  2. Chop dates, shave parmesan and roughly chop, add to bowl and toss

  3. Whisk together olive oil, white balsamic vinegar, sea salt and pepper to taste. Dress salad to liking and toss again. Add more sea salt or pepper if needed. That's it!
