Mediterranean Rice with Feta and Baby Spinach

A delicious side dish to serve alongside kabobs, hummus and pita or salmon!

  • 1 1/2 cup white or brown jasmin rice, cooked to package instructions
  • pinch sea salt (for rice water)
  • 5 ounces baby spinach
  • 3/4 cup creamy crumbled feta
  • 1/2 cup roasted salted pistachios
  • 2 tablespoons extra virgin olive oil
  • sea salt and freshly ground black pepper
  • red pepper flakes, to taste (optional)


  1. Cook rice to package instructions (usually this would mean 3 cups salted water for 1/12 cup rice)

  2. When rice has absorbed all liquid, place spinach in a medium size bowl. Pour rice on top of spinach, cover bowl with a plate and allow to rice to steam until greens are slightly wilted (1-2 minutes). While spinach steams, use a microplane to zest citrus. Toss rice and spinach, drizzle rice with olive oil, then sprinkle zest, pistachios, feta, and red pepper flakes over rice, toss. Taste, add sea salt and black pepper to taste. Serve.
