Prep vegetables. Heat a pan on medium heat, add olive oil. When oil is hot add vegetables. Sauté for 3-4 minutes, stirring frequently until slightly soft. Add broth, turn heat to high and bring to a boil. Then lower to a good simmer for two minutes. Add tortellini and cook to package instructions (usually 3-5 minutes depending on the size of your tortellini). Turn off heat, add cream, stir. Add sea salt and pepper to taste. Place in bowls and add shaved parmesan if desired.
You can also add rotisserie chicken, croutons, or a slice of sourdough.
