Air Fryer Potatoes with Bacon (Whole30)

A quick and easy potato side dish recipe made in the air fryer

Ingredients

  • 1 pound new potatoes, cut in half (or quartered if your potatoes are a little bigger)
  • 1 tablespoon olive oil
  • sea salt and freshly ground pepper
  • 3 pieces thick cut bacon
  • 2 small shallots, peeled and quartered
  • 2 tablespoon chives, sliced

Instructions

  1. Cut potatoes in half, place in a bowl, toss with olive oil, sea salt and pepper. Add to air fryer and top with slices of bacon.

  2. Air fry on 400 for 8-12 minutes, until bacon is done to your liking. Remove bacon and place on paper towel. Toss potatoes, and continue to cook potatoes for 8 more minutes. Add shallots, and cook 8 more minutes. Chop bacon and chives, set aside. When potatoes and shallots are done to your liking, pour onto a platter. Sprinkle with bacon and garnish with chives.
