Avocado and Goat Cheese Toastettes!

- 1 artisan sourdough baguette
- 2 large ripe avocados, mashed with fork
- 2-3 oz soft goat cheese
- 2 tsp olive oil
- sea salt I use Maldon Flaked Chef's Salt
- freshly ground black pepper I love this grinder!
- red pepper flakes
- 2 T chives sliced
Preheat oven to 425 and place rack in upper third of oven. Cover a cookie sheet with unbleached parchment paper.
Slice baguette into 1/2" slices. Place slices on cookie sheet and place in oven till golden brown, usually 3-4 minutes.
While bread is in oven, mash avocados with a fork.
Remove bread from oven, spoon mashed avocado on each slice of bread and then sprinkle with with soft goat cheese.
Place back in oven for 2-3 minutes (until goat cheese is just melted).
Remove, sprinkle liberally with sea salt, pepper and chives.
Then sprinkle lightly with red pepper flakes. Serve!
