2largeeggs
⅔cupsrolled oats
⅔cupschopped pecans
10ozgood quality semi sweet chocolate chips
The Orange Glaze:
3cupspowdered sugar
zest from one orange
3-4Tablespoonsfresh orange juice (you'll need 2-3 oranges)
Instructions
Preheat oven to 375 degrees and place rack in center of oven.
For Cookies:
Place flour, salt, cinnamon and baking soda in a large bowl, whisk and set aside. Cream butter and sugars in mixer. Add eggs and vanilla paste, mix until well combined. Slowly add flour mixture and whole oats, mix well. Add chocolate chips and pecans, fold in by hand. Place by large spoonfuls onto parchment covered cookie sheet and bake for 11-13 minutes. Allow cookies to cool, then glaze.
For Glaze:
Zest orange, set aside. Place powdered sugar in a large bowl and add orange juice a little at a time. When consistency is like thick honey (really thick, barely pourable)stop adding juice. Add zest and mix. Drizzle lightly on cooled cookies. Serve when glaze is set.
Notes
Tip! If your cookies tend to fall flat during baking, place dough in the refirgerator for 30 minutes before baking. This gives the butter a chance to get solid again.
