Ingredients

For Cowboy Butter:

  • ½ cup softened butter
  • ½ tablespoon course Dijon Mustard
  • 1 Tablespoon fresh or dried chives, chopped
  • 1 Tablespoon fresh or dried Parsley, chopped
  • 2 teaspoons fresh garlic, minced
  • 1 teaspoon lemon juice
  • ½ teaspoon paprika
  • 2-3 pinches sea salt
  • several turns of freshly ground black pepper
  • ⅛ teaspoon cayenne pepper
  • ⅛ teaspoon red pepper flakes

For Steak:

  • 1 pound steak: top sirloin, rib-eye, or filet mignon if you want to go all out! Cut steaks into 1" pieces as uniformly as you can.
  • 1-2 tablespoons good quality olive oil

Instructions

For Cowboy Butter:

  • Place butter in a bowl, add all herbs and spices and use a fork to mix until well combined. This will take a minute or two.

For Steak:

  • Heat a cast iron skillet on high heat for three minutes. Add olive oil to pan making sure the entire bottom of the pan is covered. Wait 30 seconds then add steak bites to pan. Cook for 2 minutes, untouched, then turn them over and cook another 1-2 minutes until done to your liking.
  • Add half the compound butter to the pan, turn heat to medium. As butter melts flip the steak coating all sides. Cook in butter for two more minutes.
  • Melt the rest of the butter and serve alongside steak for dipping!

Notes

You can make compound butter in advance and keep in the fridge for a week or in the freezer. You can also freeze the steak bites. Place them in a freezer safe container once they have cooled. They stay good in the freezer for 2-3 months.
