Ingredients

This salad is quick to put together if you use a bottled pomegranate syrup. If you are reducing your own pom juice, give yourself an extra 30 minutes. If making your own, simmer one cup pomegranate juice in a small pan until it measures 1/4 cup.

Pomegranate Vinaigrette:

  • ½ cup olive oil
  • ¼ pomegranate juice syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (omit if using store bought pomegranate syrup that is already sweetened
  • pinch sea salt

Salad:

  • 4 cups red leaf lettuce
  • ½ yellow bell pepper, diced
  • ½ cup caramelized walnuts (see my link above) If you prefer plain walnuts that's fine too.
  • 2 green onions (spring onions) sliced
  • ½ pomegranate seeds

Instructions

For Pomegranate Vinaigrette:

  • Place all ingredients in a jar and whisk.

For salad:

  • Place all ingredients on a platter or in a bowl and toss with desired amount dressing. Sprinkle with sea salt and pepper to taste. Save extra dressing for up to a week in the fridge.

Notes

More tips: If making your own pomegranate reduction: place 1 cup pom juice in a small pan. Bring to a simmer and reduce to 1/4 cup. After 15 minutes, measure the juice. You will probably need to keep simmering, from here on out measure every five minutes until you have 1/4 cup reduction. Allow to cool before use.
