Easy Shaved Brussels Sprouts Salad

A simple salad that tastes great with almost any protein. Made in 10 -15 minutes depending on if you use a food processor or knife.

Ingredients

The Dressing:

  • 1/4 cup good quality extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1-2 teaspoons good quality honey (optional)
  • sea salt and pepper to taste

The Salad:

  • 4 cups shaved Brussels Sprouts
  • 1/2 cup chopped marcona almonds, pine nut, or chopped pecans
  • 3 tablespoons chopped chives
  • 1/2 cup dried cranberries
  • 1/2 oz freshly grated Parmesan Cheese

Instructions

For Dressing:

  1. In a small bowl add olive oil, lemon juice, and honey (optional). Whisk until emulsified. Add sea salt and freshly ground pepper to taste. Set aside.

For Salad:

  1. Cut off the ends of Brussels sprouts and shave by running through a food processor using the slicing blade, or use a mandolin. If using a knife, cut off ends, then cut each sprout in half and then thinly slice. Place in a large bowl.

  2. Add nuts, chives, and cranberries, toss with desired amount of salad dressing, toss again. Add parmesan, toss. Enjoy!

Recipe Notes

If you prefer your Brussels sprout a little softer, allow salad to sit for 15 minutes before serving.
