Grilled Chicken Salad with Berries and Honey Lemon Dressing

A delicious, easy to make spring/summer salad!

Ingredients

The Salad:

  • 4 boneless skinless chicken breasts Cooked on the grill or cooktop (instructions linked in blog post above or recipe below)
  • 4 cups fresh baby greens
  • 1 1/2 cups assorted berries
  • 1/2 cup feta cheese
  • 1/2 cup pecans or walnuts
  • 1/4 cup thinly sliced red onion

Honey Lemon Dressing:

  • 1/3 cup good quality extra virgin olive oil
  • 3 Tablespoons freshly squeezed lemon juice
  • 1 Tablespoon raw honey
  • pinch sea salt
  • few turns fresh black pepper

Instructions

For salad:

  1. Prepare chicken, either grilled of cooked on cooktop (or if youre in a hurry, use rotisserie chicken)

Prepare dressing:

  1. Whisk together olive oil, lemon juice, honey, sea salt, and pepper. Set aside.
  2. When chicken is finished allow to rest for five minutes while you prep salad

  3. Place all salad ingredients in a large bowl or on a platter. Dress salad to your liking and toss. Separate salad onto four plates, slice chicken breasts and set on top of each salad. If you have extra dressing (you should) drizzle over chicken. Sprinkle with additional sea salt and pepper if needed.
