1-2large, ripe peaches, diced and preferably cold (you can leave the peel on or off)
1/2-1cup cottage cheese (I use full fat)
zest of one lemon
2tablespoons chopped nuts, I used roasted, salted pistachios)
good quality real honey
Option: You can add whatever else you like in whatever amount you desire. You can use almonds or walnuts instead of pistachios, if honey isn't your thing I suggest dried cranberries, or chopped dates instead. If you prefer vanilla Greek yogurt to cottage cheese, feel free!
Instructions
Dice peaches and place in bowl, add cottage cheese and top with any of the ingredients listed above. Enjoy!
