Sautéed Carrots Three Ways

I love Carrots. And with the holidays upon us one can always use a good carrot dish. This one can be made three ways. You can choose the healthiest version and simply sauté carrots in butter with a little sea salt… or sweeten it up by adding a little light brown sugar… or make it extra fancy by adding sugar and the zest of an orange. All three ways are delicious!

Ingredients

Simple Version:

  • 2 pounds carrots, peeled and sliced diagonally, ¼ inch thick
  • 1/4 cuo Butter
  • 2 tablespoons chives, chopped
  • Sea Salt and Freshly ground pepper

Add Ons:

  • 1/4-1/3 cup light brown sugar (for fancier option)
  • Zest of one medium orange

Instructions

Simple version:

  1. Peel and slice carrots on the diagonal (about 1/8" thick)

  2. Melt butter in pan on medium heat, add carrots

  3. Cook, stirring occasionally until carrots are soft. This will take about 12-15 minutes. Sprinkle with sea salt and freshly ground pepper to taste. Add chives and cook one more minute.

Add ons:

  1. If you want to make the sweeter version, follow directions above but before adding chives sprinkle with a little brown sugar, allow to melt and serve. If you want to really make it a tasty treat add the brown sugar and the fresh orange zest!
