How to make Sautéed Carrots Three Ways: Simple or Dressed for The Holidays:
This recipe is so simple! For version one, all you need are fresh organic carrots, butter, and sea salt/pepper. This is the version you’ll want to make for a casual family dinner. Version two adds chives for a bit of fancy color, these option is great for a healthy side dish when you have guests over…
…and finally, version three is a holiday option sweetened by adding a little light brown sugar (or if you are like me and prefer a natural low glycemic option you can use Coconut sugar ) and the zest of an orange. All three ways are delicious!
How to Zest an Orange:
I use a tool called a microplane to zest citrus. Just lightly scrape the skin till the white is exposed, then move to a new area. The orange part of the skin is full of essential oils that smell and taste heavenly! The white underneath is bitter.

No matter which option you choose you’ll have a delicious, tender and beautiful carrot side dish that everyone will love!

The Recipe: Sautéed Carrots Three Ways
What you need: as always you’ll need a a good knife! And if you’re making the fancy version you’ll need brown sugar or Coconut sugar and a microplane.
A delicious carrot side dish with three options: plain, with chives or fancy holiday option with brown sugar (or Coconut sugar) and orange zest!
- 2 pounds carrots, peeled and sliced diagonally, ¼ inch thick
- 1/4 cup Butter
- Sea Salt and Freshly ground pepper
- 2 tablespoons chives, chopped
- 1/4-1/3 cup light brown sugar
- Zest of small medium orange

Peel and slice carrots on the diagonal (about 1/4" thick). Melt butter in pan on medium heat, add carrots.

Cook, stirring occasionally until carrots are soft. This will take about 15 minutes. Sprinkle with sea salt and freshly ground pepper to taste. Serve

Follow steps above then add chopped chives.

Version 3: The Fancy Holiday Option:

Follow directions above but before adding chives sprinkle with brown sugar (or coconut sugar) and orange zest, stir.

Remove from pan and serve!
