The Organic Kitchen Chopped Salad with Apple Vinaigrette
I love this salad! Chopped romaine, caramelized walnuts, diced apples, dried cranberries and aged gouda drizzled with an amazing tangy apple vinaigrette. It looks lovely and tastes even better!

Ingredients
For salad:
1 1/2heads romaine lettuce, chopped
1cupgood quality Gouda cheese, diced
1cupdried cranberries
1cupwalnuts raw or caramelized, to taste (see link above)
2Granny Smith apples diced
Apple Vinaigrette:
1/4cupextra virgin olive oil
3Tablespoonsfrozen organic apple juice concentrateTip! Reseal the can with plastic and a rubber band and place back in freezer to avoid waste
2Tablespoonsapple cider vinegar
1 1/2Tablespoonswhite balsamic vinegar
1/2teaspoonDijon mustard
2teaspoonsfresh lemon juice
1Tablespoonhoney
1pinchsea salt
½tspfreshly ground pepper
Instructions
For salad:
Combine ingredients, dress with apple vinaigrette. Toss and serve.
For Dressing:
Combine all ingredients and whisk. Dress salad. Save extra dressing in covered container in the fridge for up to a week. Once plated, add more freshly ground pepper if desired.
