Roasted Maple Glazed Carrots with Feta

A delicious carrot side dish that's perfect for casual family meals, entertaining, or the holidays. I highly recommend using parchment paper or you are going to have a really sticky pan to clean up.

Ingredients

  • 12 medium-large sized carrots, peeled and sliced 1/4" thick
  • 2 tablespoons good quality extra virgin olive oil
  • 2 tablespoons maple syrup
  • sea salt and pepper, to taste
  • 1/3 cup crumbled feta cheese
  • 1/4 cup chopped cilantro, chives, or parsley
  • Optional: if you like a little crunch this dish is nice sprinkled with sliced almonds

Instructions

  1. Place a piece of parchment paper on rimmed cookie sheet. Preheat oven to 425 degrees and place oven rack in center position.

  2. Peel and slice carrots, place on parchment covered cookie sheet. Whisk together olive oil and maple syrup, drizzle over carrots, toss. Make sure all carrots are covered with glaze.

  3. Sprinkle with sea salt and black pepper. Toss again.

  4. Roasts for 40-45 minutes, until carrots are cooked and starting to brown on the edges. Remove from oven.

  5. Place carrots on a platter, sprinkle with Feta and herbs. Serve.
