Steel-Cut Oats with Seasonal Fruit

A fast and easy breakfast with seasonal fruit! I used the fruit listed below but offer additional suggestions as well

Ingredients

  • 3 cups water
  • 1 cup whole milk or non dairy milk of your choice
  • 1 tablespoon butter
  • 1 cup cooked steel-cut oats cook according to package directions or use Pacific Foods ready to eat steel cut oats.
  • pinch sea salt

Toppings shown above:

  • pear or apple slices
  • chopped dates
  • slices of fresh fig
  • blueberries
  • pomegranate seeds
  • roasted salted pepitas pumpkin seeds

Additional Add ons:

  • Nut butters and all nuts or seeds. Fresh fruits. Dried fruits like apricots, blueberries, cranberries, cherries, and shredded coconut. You can add flavor and sweetness with applesauce, yogurt, maple syrup, honey or jams as well as vanilla paste and cinnamon!

Instructions

  1. In a med/large pot, combine the water and milk. Bring the mixture to a simmer over medium heat. While pot heats melt butter) in pan over medium heat. Once butter shimmers, add the oats and cook, stirring occasionally for 2 minutes or until lightly toasted and golden.

  2. StirWhen water is boiling add oats to pot. Lower heat to medium-low, but be sure to maintain a low simmer. Cook for about 18-20 minutes, stirring occasionally, until the oats thicken up

  3. Add sea salt, stir. Continue to simmer, , stirring here and there and reducing heat as necessary for about 10 minutes. When liquid is absorbed, and oats are creamy, you're done! Let oats cool for a few minutes before adding toppings etc.

  4. To store extras for later use: wait until completely cool. Place in airtight container and reheat as needed!
