Summer Berries with Lime, Mint and Honey

A fresh, light, healthy summer salad that can be served as an appetizer, side dish or dessert!

Ingredients

For the dressing:

  • 3 tablespoons freshly squeezed lime juice, room temp
  • 3 tablespoons good quality honey, heat a little in the microwave if too thick to whisk
  • 2 tablespoons mint leaves, chopped

For the salad:

  • 2 cups strawberries, cut in half
  • 1 cup raspberries
  • 1 cup blueberries
  • 1 cup blackberries

Instructions

For dressing:

  1. Place lime juice, honey and chopped mint n a jar and whisk until blended well

For salad:

  1. Place berries in a bowl. Drizzle with dressing right before serving and gently toss, being careful not to crush the berries. Serve!

Recipe Notes

When I serve thisĀ  berry salad as an appetizer or dessert I will pair it with a small plate of aged gouda. So good!
