The Rustic Italian Salad

The Rustic Italian Salad is a beautiful salad made with traditional Italian ingredients

Ingredients

  • 5 cups baby arugula
  • 1 cup sliced radicchio lettuce, sliced
  • 8 slices prosciutto, cut into 2" strips
  • 1 ripe pear, cut into small cubes
  • 1/3 cup Marcona almonds, chopped
  • 1/3 cup freshly grated Parmesan
  • 1/4 cup good quality olive oil
  • 1/4 white balsamic vinegar (see my link above for the best!)
  • sea salt, freshly ground black pepper

Instructions

  1. Place all ingredients except cheese on a platter

  2. Place olive oil, vinegar, sea salt, and pepper in a small bowl and whisk. Dress salad, toss, sprinkle with cheese. Serve!
