Easy Caramel Pecan Turtles

Easy to make and simply delicious!

Ingredients

You will need wax paper

  • your favorite cooking spray (I use a coconut oil spray for this one)
  • 40 whole pecans
  • 20 wrapped caramels, (unwrapped and melted)
  • 1 cup dark chocolate chips, melted
  • several pinches of good quality sea salt flakes

Instructions

  1. Spray wax paper with a light coating of cooking spray, this helps to keep the turtles from sticking.

  2. Place pecans in groups of four in a flower (or cross) shape

  3. Melt caramel in a microwave according to package instructions. If your caramels don't have instructions, melt in the microwave at 50% power for 30 seconds, stir, if they need more time, repeat. But keep an eye on them they melt fast! Spoon over each group of pecans.

  4. Melt chocolate in glass measuring cup according to package instructions (usually melt in the microwave at 50% power for 60 seconds, stir and repeat until melted and smooth) Spoon on top of caramel. Sprinkle with small pinches of sea salt. Allow to firm up before serving, this can take about an hour. Enjoy!
