Greens with Cherries, Nectarines and Passionfruit Vinaigrette!

Salads really are beautiful. This Greens with Nectarines, Cherries and Passionfruit Vinaigrette is especially so. You can choose between Passionfruit Vinaigrette or Champagne Vinaigrette!

Ingredients

Salad:

  • 5 oz mesclun a combination of greens that originated in Provence France
  • 3 nectarines thinly sliced
  • 15 cherries cut in half and pitted
  • ⅓ slivered almonds
  • Soft goat cheese optional

Passionfruit Vinaigrette:

  • ⅓ cup extra virgin olive oil
  • 3 T Fruit De La Passion Vinegar
  • Juice of half a lemon
  • 2 teaspoons honey optional
  • second option for dressing...

Honey Champagne Vinaigrette

  • ½ cup extra virgin olive oil
  • ¼ Champagne vinegar
  • 2 T honey
  • 1 pinch sea salt
  • Aa few turns of freshly ground pepper

Instructions

  • Place all salad ingredients on a platter.
  • Place all dressing ingredients into a small bowl and whisk.
  • Dress salad and toss.
