Salads really are beautiful. This Greens with Nectarines, Cherries and Passionfruit Vinaigrette is especially so.

Stone fruits:
Cherries and Nectarines are what is know as “stone fruits”. Stone Fruits are fruits that have a thick flesh that surrounds a large single pit like cherries, plums, nectarines, peaches, apricots etc. Stone fruits are known to be high in cancer fighting properties such as phenols, vitamin B17 and vitamin C and may be effective in fighting metabolic syndrome So take advantage of their healthful properties when they are in season and add them to oatmeal, salads, cereal or just have a big bowl out on the counter for snacking.

I make this salad with an incredible Passionfruit Vinegar from A L’Olivier. My local Whole Foods Market carries it, but you can also have it delivered to your door. I also offer a honey champagne vinaigrette option in the recipe.
The passionfruit option is the perfect light, sweet and healthy salad dressing! The champagne vinaigrette has a bit of a tang. both are lovely with the cherries and nectarines.
The Recipe: Greens with Cherries, Nectarines and Passionfruit Vinaigrette
This recipe is pretty straight forward so the only question you may have is “How do I pit a cherry?” It’s actually very simple. Just use a paring knife to cut the cherry in half, then gently twist each half of the cherry in opposite directions. The cherry will come apart and the pit will remain in one half. Simply use your fingers to pry the pit out! You can pit the cherries by hand or use this cherry pitter.

- 5 oz mesclun a combination of greens that originated in Provence France
- 3 nectarines thinly sliced
- 15 cherries cut in half and pitted
- 1/3 slivered almonds
- Soft goat cheese optional
- 1/3 cup extra virgin olive oil
- 3 T Fruit De La Passion Vinegar
- Juice of half a lemon
- 2 teaspoons honey optional
- second option for dressing...
- ½ cup extra virgin olive oil
- ¼ Champagne vinegar
- 2 T honey
- 1 pinch sea salt
- Aa few turns of freshly ground pepper

Place all salad ingredients on a platter.

Place all dressing ingredients into a small bowl and whisk.

Dress salad and toss.
