Grilled Peaches with Burrata and Prosciutto

Warm, sweet summer peaches grilled and served with creamy burrata cheese, prosciutto and arugula.

Ingredients

  • 2 ripe "free stone" peaches (if using "cling peaches, you'll need to slice them instead of cutting the peach in half) cut in half pit removed
  • 8 oz burrata cheese
  • 12 slices prosciutto
  • 2-3 cups baby arugula
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • sea salt
  • freshly ground pepper
  • balsamic glaze (desired amount)

Instructions

  1. Toss arugula with a light coat of olive oil and and lemon juice. Sprinkle with sea salt and freshly ground pepper. Evenly divide onto four plates.

  2. Divide burrata into four portions on plates. Do the same with prosciutto.

Grill prep for outdoor grill:

  1. Wipe grill with coconut oil or non toxic cooking spray to prevent sticking, turn heat to 375-400 degrees.

Grill prep or Indoor Grill Pan:

  1. Heat non stick grill pan on medium heat for two minutes.

Cooking instructions for both grill and grill pan:

  1. Place peaches on grill and cook for 3-5 minutes untill warm and grill marks are established.

  2. Remove from grill and place on prepared plates.

  3. Drizzle cheese, peaches and prosciutto with balsamic glaze.

  4. Try to get a bit of everything on your fork with each bite and prepare to be dazzled!

Recipe Notes

You can also serve all four servings on one big platter and let people serve themselves.
