Strawberries with Lemon Mascarpone Dip and Pistachios

Ingredients

  • 2 pints organic strawberries, washed
  • 8 oz mascarpone cheese (like cream cheese but silkier and sweeter)
  • 2 tablespoons honey, or liquid stevia drops to taste
  • zest of one large lemon
  • ½ cup roasted salted pistachios, chopped

Instructions

  • In a bowl use a fork to combine mascarpone, honey (or stevia drops) and lemon zest (reserve a little zest for garnish)
  • Serve with strawberries and pistachios. Yum!
