
A quick, easy soup made in 15 minutes or less.
Place medium sized pot on cooktop on high heat. Add olive oil.
Add prepared onions, celery and carrots. Saute for 4 minutes.
Add broth in a large pot on high heat. Bring to a boil.
Add tortellini and cook for as long as package instructions indicate, adding quartered artichoke hearts the last 60 seconds. (If needed, add bouillon)
If you are not a fan or artichoke hearts, you can sub with peas.
