It has been a while since I have posted a 15 minute meal, so I am bringing it back with this 15 Minute Tortellini Soup! It is simple, delicious, and can be made in one pot lickety split!

How to Make 15 Minute Tortellini Soup:
The base of this nutritious soup is traditional chicken stock. You can keep it easy by using store bought (I highly recommend Kettle and Fire) or make your own on the cooktop or Instant Pot! It’s totally up to you, either way this soup will be delicious. If you have never made chicken broth before, it’s actually pretty fun. So if you’re looking to expand your cooking horizons, I highly recommend giving it a go.
The Veggies:
To make this easy soup, we start with a classic mirepoix, which is a fancy French word for chopped carrots, celery and onion sautéed in olive oil. Simply simmer the veggies for a few minutes until soft.
The Pasta:
Then add your favorite fresh tortellini. You can find it in the refrigerated deli section of the grocery store in three cheese, spinach, chicken…take your pick! Add artichoke hearts and you have a delicious warm meal in 15 minutes or less! If artichokes aren’t your bag you can always use peas, or simply dice an avocado and add it last.

The Recipe:15 Minute Tortellini Soup!
Tips and what you will need: You can find fresh tortellini in the deli section of most grocery stores. They come in a variety of choices: three cheese, spinach and ricotta, even chicken. Choose your favorite. I used “Three Cheese.” I LOVE this sea salt.
A quick, easy soup made in 15 minutes or less.
- 1 tablespoon olive oil
- 6 green onions, ends cut off and sliced
- 1 rib celery, diced
- 3 small carrots, peeled and diced small
- 8 cups chicken broth (quality matters!)
- 7 oz package fresh tortellini
- Half of a 15 oz can artichoke hearts packed in water, chopped
- 1/2 teaspoon Better than Bouillon, or one bouillon cube. If your broth is on the bland side, this will add flavor

Place medium sized pot on cooktop on high heat. Add olive oil.

Add prepared onions, celery and carrots. Saute for 4 minutes.

Add broth in a large pot on high heat. Bring to a boil.

Lower heat and simmer for 4 minutes.

Add tortellini and cook for 7 minutes (or as long as package instructions indicate) adding quartered artichoke hearts the last 60 seconds. (If needed, add bouillon)

Season to taste with salt and pepper.
