White Cheddar Meatloaf with Caramelized Onions

A delicious savory meatloaf topped with white cheddar and sweet caramelized onions

Ingredients

  • 1 medium sized yellow onion, peeled and thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon extra virgin olive oil
  • 1 1/2 pounds ground beef
  • 1/2 cup plain breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt or kosher salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups white cheddar, grated

Instructions

  1. Prep the onion. Melt butter a heavy pan on medium heat. Add olive oil and onions and sauté for five minutes. Lower heat to low and cook for 20 more minutes, until caramelized and golden. Sprinkle with sea salt and allow to cool a bit. While onions cook, grate cheese.

  2. Preheat oven to 375 degrees. Place parchment paper on a rimmed cookie sheet. Set aside.

  3. In a large bowl, combine hamburger, bread crumbs, milk, egg, thyme, garlic, sea salt, pepper, and half of the grated cheddar. Chop half of the onions finely and add to the bowl. Mix with hands until ingredients are well combined. Form into a loaf and place on a parchment covered cookie sheet. Sprinkle with a little more sea salt. Place in the oven and cook for 35 minutes.

  4. When timer goes off sprinkle meatloaf with remaining cheddar and top with remaining onions. Bake for 10 more minutes. Let rest for five minutes, serve.
