It took 14 years, but I am finally publishing a meatloaf recipe. This White Cheddar Meatloaf with Caramelized Onions is next level. So much flavor, so much melted cheese, and those onions? Well they add the perfect touch of sweetness to this savory meal.

White Cheddar Meatloaf with Caramelized Onions:
This meatloaf starts like most meatloaf recipes: grass fed ground beef, bread crumbs, egg, and spices, but then we go a little outside the box by adding white cheddar and sweet caramelized onions, worked into the meatloaf and on placed top. So good! This meatloaf is not baked in a loaf pan, you simply form it into a loaf and bake on a parchment covered cookie sheet.

The Recipe: White Cheddar Meatloaf with Caramelized Onions
What you need: a good knife, an excellent sea salt, a cast iron pan and parchment paper.

A delicious savory meatloaf topped with white cheddar and sweet caramelized onions
- 1 medium sized yellow onion, peeled and thinly sliced
- 2 tablespoons butter
- 1 tablespoon extra virgin olive oil
- 1 1/2 pounds ground beef
- 1/2 cup plain breadcrumbs
- 1/4 cup milk
- 1 egg
- 1 1/2 teaspoons dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon sea salt or kosher salt
- 1/2 teaspoon black pepper
- 1 1/2 cups white cheddar, grated

Prep the onion. Melt butter a heavy pan on medium heat. Add olive oil and onions and sauté for five minutes. Lower heat to low and cook for 20 more minutes, until caramelized and golden. Sprinkle with sea salt and allow to cool a bit. While onions cook, grate cheese.

Preheat oven to 375 degrees. Place parchment paper on a rimmed cookie sheet. Set aside.

In a large bowl, combine hamburger, bread crumbs, milk, egg, thyme, garlic, sea salt, pepper, and half of the grated cheddar. Chop half of the onions finely and add to the bowl. Mix with hands until ingredients are well combined. Form into a loaf and place on a parchment covered cookie sheet. Sprinkle with a little more sea salt. Place in the oven and cook for 35 minutes.

When timer goes off sprinkle meatloaf with remaining cheddar and top with remaining onions. Bake for 10 more minutes. Let rest for five minutes, serve.
