This 20 Minute Creamy Tortellini Soup is a warm, nourishing quick lunch or dinner recipe. It’s easy comfort food with minimal prep and everyone loves it! Budget friendly too.

20 Minute Creamy Tortellini Soup:
For this soup, we start by dicing carrots, celery and green onions and sautéing for a few minutes in olive oil until slightly soft, then we add chicken broth and bring to a simmer, add tortellini and simmer for a few more minutes, just until the pasta is al dente. Then we add a little cream to thicken up that broth and we are done. Yup, that’s it! I like to shave a little parmesan on top because why not?

The Recipe: 20 Minute Creamy Tortellini Soup
What you need: a large pot, a good knife, and a great sea salt. (<— save money with this big tub!)

a delicious meal made from scratch in 20 minutes
- 2 tablespoons good quality olive oil
- 1 cup carrots, diced small
- 2 stalks celery, diced small
- 2 green onions, sliced from end to end
- 6 cups good quality chicken broth
- 10 ounces fresh cheese tortellini
- 1/2 cup cream
- sea salt and freshly ground pepper, to taste
- shaved parmesan cheese, optional

Prep vegetables. Heat a pan on medium heat, add olive oil. When oil is hot add vegetables. Sauté for 3-4 minutes, stirring frequently until slightly soft. Add broth, turn heat to high and bring to a boil. Then lower to a good simmer for two minutes. Add tortellini and cook to package instructions (usually 3-5 minutes depending on the size of your tortellini). Turn off heat, add cream, stir. Add sea salt and pepper to taste. Place in bowls and add shaved parmesan if desired.
You can also add rotisserie chicken, croutons, or a slice of sourdough.
